Shrimp with Pink Vodka Sauce
½ lb. shrimp peeled & deveined
1 tbsp garlic
1 tbsp onion
¼ cup cooked peas
¼ cup pancetta (Italian bacon) or prosciutto
½ cup grated parmesan
½ cup vodka
½ cup heavy cream
16 oz can tomato sauce
Sauté onion, garlic, & meat in olive oil. Add shrimp & sauté for only a minute. Pour in vodka, & reduce for 3-4 min. Add tomato sauce & peas. Sauté for 3 min until hot, then add cream. Remove from heat & add cheese. Mix with pasta (“I use bowties.”)
